  • 1/2 cup Cherry Tomatoes halved or quartered
  • 1/4 medium Red Onion substitute for green onions if desired
  • 1/4 cup Fresh Cilantro or parsley/basil if preferred
For the Dressing
  • 2 tablespoons Olive Oil extra virgin olive oil recommended
  • 1/2 medium Lemon Juice add more for leftovers

  • to taste Black Pepper
  • optional to taste Feta Cheese omit for dairy-free or swap for nutritional yeast

Method
 

Preparation Steps
  1. Wash and prep vegetables. Dice avocado, chop cucumber, halve cherry tomatoes, and finely chop red onion.
  2. Open and drain tuna. Flake it with a fork, then add to the mixing bowl with vegetables.
  3. Chop cilantro and add it to the bowl, mixing gently without mashing the avocado.
  4. Drizzle olive oil and lemon juice over the mixture, stirring to combine.
  5. Gently toss ingredients together while avoiding crushing the avocado.
  6. Season with salt and black pepper to taste, and toss gently again.
  7. Add optional toppings like feta cheese or chili flakes if desired.
  8. Serve immediately in bowls or from the mixing bowl for casual dining.
