- Marinate the shrimp by combining with olive oil and Cajun seasoning. Let sit for 15 minutes.
- Cook fettuccini in boiling salted water for 8-10 minutes until al dente, then drain and toss with olive oil.
- In a skillet, melt butter and sauté mushrooms and shallots for about 5 minutes until tender.
- Add marinated shrimp to skillet and cook for 2-3 minutes until pink and opaque.
- Pour chicken broth into the skillet, scraping up browned bits. Reduce by half in 2-3 minutes.
- Mix sour cream with cornstarch and remaining chicken broth, then add to the skillet.
- Combine cooked shrimp, sautéed veggies, roasted bell peppers, and capers in the skillet. Cook for an additional 2-3 minutes.
- Serve over fettuccini, garnishing with parsley if desired.
