Ingredients

  • 1 pound Shrimp Marinated with Cajun seasoning
  • 2 tablespoons Olive Oil Can substitute with canola or avocado oil
  • 2 tablespoons Cajun Seasoning Homemade or store-bought
For the Pasta and Sauce
  • 8 ounces Fettuccini Pasta Use gluten-free pasta for a GF option
  • 2 tablespoons Butter Can substitute with margarine or olive oil
  • 1 cup Mushrooms Sliced, optional varieties include button or cremini
  • 2 tablespoons Shallots Can substitute with yellow or red onion
  • 1 cup Chicken Broth Low-sodium or vegetable broth can be used
  • 1 cup Sour Cream Greek yogurt can be a lighter substitute
  • 1 tablespoon Cornstarch Optional thickening agent
For the Enhancements
  • 1 cup Roasted Red Bell Peppers Can use fresh peppers sautéed until soft
  • 2 tablespoons Capers Omit if preferred for milder taste
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Method
 

Cooking Instructions
  1. Marinate the shrimp by combining with olive oil and Cajun seasoning. Let sit for 15 minutes.
  2. Cook fettuccini in boiling salted water for 8-10 minutes until al dente, then drain and toss with olive oil.
  3. In a skillet, melt butter and sauté mushrooms and shallots for about 5 minutes until tender.
  4. Add marinated shrimp to skillet and cook for 2-3 minutes until pink and opaque.
  5. Pour chicken broth into the skillet, scraping up browned bits. Reduce by half in 2-3 minutes.
  6. Mix sour cream with cornstarch and remaining chicken broth, then add to the skillet.
  7. Combine cooked shrimp, sautéed veggies, roasted bell peppers, and capers in the skillet. Cook for an additional 2-3 minutes.
  8. Serve over fettuccini, garnishing with parsley if desired.
