  • 2 medium Cucumbers Use firm, English cucumbers for the best crunch
  • 1 cup Cherry Tomatoes
  • 1/2 medium Red Onion Optional for a lighter flavor
  • 1/4 cup Fresh Dill Chopped
  • 1/4 cup Fresh Mint Chopped
  • 1 cup Feta Cheese Dairy-free option: avocado or plant-based feta
For the Dressing
  • 2 tablespoons Red Wine Vinegar or Lemon Juice
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 clove Minced Garlic Optional
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash cucumbers, cherry tomatoes, and red onion thoroughly. Chop cucumbers, halve cherry tomatoes, and thinly slice red onion.
  2. In a large mixing bowl, combine the prepared cucumbers, cherry tomatoes, and red onion. Add chopped dill and mint.
  3. If using, crumble feta cheese over the salad and fold it in gently.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, and minced garlic. Add salt and pepper, blending well.
  5. Pour dressing over the salad and toss gently until everything is well-coated.
  6. Taste the salad and adjust seasoning with more salt, pepper, or lemon juice if necessary.
  7. Cover and refrigerate for at least 15 minutes before serving to allow flavors to meld.
