Preparation
- Preheat your oven to 350°F (175°C). Lightly grease a baking dish with vegetable oil.
- In a large mixing bowl, whisk together the eggs, grated apple, chopped scallions, minced garlic, and ginger. Stir in gochugaru, brown sugar, soy sauce, sesame oil, and panko breadcrumbs.
- Gently fold the ground beef into the mixture, then transfer to the greased baking dish and shape it into a loaf.
- Place the baking dish in the oven and bake for approximately 1¼ to 1½ hours, or until internal temperature reaches 160°F (70°C).
- Once baked, remove the meatloaf from the oven and let it rest for about 15 minutes before slicing.
- In a hot frying pan, heat a splash of vegetable oil, then add sliced meatloaf and sear for 3-4 minutes on each side until browned.
- Spread gochujang on slices of bread, layer with seared meatloaf, and top with kimchi. Press slightly before serving.
