Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish with vegetable oil.
  2. In a large mixing bowl, whisk together the eggs, grated apple, chopped scallions, minced garlic, and ginger. Stir in gochugaru, brown sugar, soy sauce, sesame oil, and panko breadcrumbs.
  3. Gently fold the ground beef into the mixture, then transfer to the greased baking dish and shape it into a loaf.
  4. Place the baking dish in the oven and bake for approximately 1¼ to 1½ hours, or until internal temperature reaches 160°F (70°C).
  5. Once baked, remove the meatloaf from the oven and let it rest for about 15 minutes before slicing.
  6. In a hot frying pan, heat a splash of vegetable oil, then add sliced meatloaf and sear for 3-4 minutes on each side until browned.
  7. Spread gochujang on slices of bread, layer with seared meatloaf, and top with kimchi. Press slightly before serving.
