Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 pound of ground beef to the skillet; cook for 5-7 minutes until browned.
  3. Stir in 1 chopped onion and 2 minced garlic cloves; cook for 3-4 minutes until the onion is translucent.
  4. Add 3 diced medium potatoes, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1/2 teaspoon dried oregano. Stir well.
  5. Pour in 1/2 cup beef broth, cover, and simmer on low for 20-25 minutes until potatoes are tender.
  6. Sprinkle 1 cup of shredded cheddar cheese over the top; cover and cook for 2-3 minutes until melted.
