Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with vegan butter or oil.
  2. In a large bowl, mash 3 overripe bananas; stir in 1/3 cup melted vegan butter, 1/2 cup maple syrup, 1/4 cup almond milk, and 1 teaspoon vanilla until creamy.
  3. In another bowl, whisk together 1 teaspoon baking powder, 1/2 teaspoon baking soda, 2 teaspoons cinnamon, 1/2 teaspoon salt, and 1.75 cups flour. Mix in 1/2 cup oats.
  4. Gently combine the dry ingredients into the wet mixture until just combined.
  5. In a small bowl, mix together 1/4 cup melted vegan butter, 1/3 cup light brown sugar, and 2 tablespoons cinnamon to create the cinnamon swirl paste.
  6. Pour half of the banana bread batter into the loaf pan, drizzle with half of the cinnamon swirl mixture, and gently swirl with a knife. Repeat with the remaining batter and swirl.
  7. Bake for approximately 45 minutes, or until a toothpick comes out clean. Rest for 10 minutes before cooling on a wire rack.
  8. Prepare cream cheese glaze by mixing 1 cup powdered sugar, 2 tablespoons melted vegan butter, and 1/4 cup softened vegan cream cheese until smooth. Drizzle over cool bread.
