  2. In a large mixing bowl, mash about three ripe bananas until smooth. Add granulated sugar, brown sugar, melted unsalted butter, large eggs, and vanilla extract. Whisk until well combined.
  3. Sprinkle the baking soda and salt directly over your banana mixture. Fold in the all-purpose flour until just combined.
  4. In a small bowl, combine granulated sugar with cinnamon to create your cinnamon filling. Set aside.
  5. Pour half of the banana bread batter into the prepared loaf pan and sprinkle half of the cinnamon sugar mixture over it.
  6. Pour the remaining batter over the first layer and tap the loaf pan to release air bubbles.
