Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and cook the lasagna noodles according to the package instructions.
  2. In a large mixing bowl, combine the ricotta cheese with the large egg. Fold in the chopped spinach and season with salt and pepper.
  3. In a skillet, heat olive oil over medium heat. Add zucchini and bell pepper, cooking for 5-7 minutes until tender, then stir in garlic and Italian seasoning.
  4. Spread marinara sauce in a baking dish. Layer lasagna noodles, followed by the ricotta mixture, sautéed vegetables, and mozzarella cheese.
  5. Repeat layers and top with remaining marinara sauce and grated Parmesan cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.
  7. Let rest for 10 minutes before slicing and serving.
