- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it.
- In a large mixing bowl, combine 3 mashed ripe bananas, 2 large eggs, and 1 cup of cottage cheese. Mix until smooth and creamy.
- Stir in 1/4 cup of maple syrup and 1 teaspoon of vanilla extract until thoroughly incorporated.
- Gradually fold in 2 cups of almond flour, 1 teaspoon of baking soda, and 1 teaspoon of cinnamon. Mix gently until no dry spots remain.
- Transfer the batter into the prepared loaf pan, smoothing the top evenly.
