Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground beef and cook until it’s nicely browned, breaking it into crumbles with a spatula, about 5-7 minutes.
  2. Add 1 finely chopped onion and 2 minced garlic cloves into the pot with the beef. Sauté for about 2-3 minutes until the onion turns translucent and the garlic is fragrant.
  3. Sprinkle 2 tablespoons of all-purpose flour over the beef and onion mixture. Stir well to coat everything evenly, allowing the flour to absorb the juices.
  4. Gradually pour in 4 cups of beef broth while continuously stirring. Bring the mixture to a gentle simmer over medium heat.
  5. Incorporate 2 diced potatoes, 2 sliced carrots, and 2 chopped celery stalks into the pot. Bring the soup to a boil, then reduce heat and cover.
  6. Add 1 tablespoon of Worcestershire sauce, salt, and freshly ground pepper to taste. Stir well and adjust seasoning as necessary.
  7. Gradually add 2 cups of shredded cheddar cheese to the pot, stirring continuously until each addition melts smoothly.
  8. Slowly pour in 1 cup of heavy cream, stirring until fully combined. Continue to heat on low for another 5 minutes.
  9. Ladle the piping hot Cheesy Ground Beef Soup into bowls. For a fresh touch, sprinkle with freshly chopped parsley.
