Preparation Steps
- Preheat your oven to 350°F (175°C) while you prepare the crust. Take an 8 or 9-inch tart pan and lay the puff pastry inside, crimping the edges to create a decorative finish.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chopped thick-cut bacon, sautéing until crispy and golden, about 5-7 minutes. Stir in diced onion, then sliced potatoes and fresh dill, seasoning with salt and pepper. Cook for an additional 3-5 minutes.
- Pour the potato mixture into the prepared crust. Drizzle about 1 cup of heavy cream over the top.
- Bake for 35-45 minutes until the crust is golden brown and the potatoes are fork-tender.
- Let it rest for about 10 minutes. Sprinkle freshly chopped chives on top before serving.
