Preparation Steps
  1. Preheat the oven to 350°F (175°C) and prepare a 7-inch springform pan.
  2. Make the crust by grinding graham crackers, mixing with sugar and melted butter, and pressing into the springform pan before baking for 10 minutes.
  3. Prepare the filling by mixing softened cream cheese, sour cream, sugar, vanilla extract, and lemon zest until smooth.
  4. Incorporate eggs one at a time into the filling without overmixing, then pour over the cooled crust.
  5. Create a water bath to bake the cheesecake evenly and minimize cracks. Bake for 75 minutes.
  6. Cool the cheesecake gradually in the oven to prevent cracks, then refrigerate for at least 4 hours.
  7. Make the strawberry topping by blending strawberries and cooking with sugar, lemon juice, and cornstarch, then cool.
  8. Serve the cheesecake chilled with the strawberry topping spread evenly on top.
