- Cook the sausage in a large pot over medium-high heat for 5-7 minutes until browned. Remove and set aside.
- In the same pot, sauté chopped onion and minced garlic for about 3 minutes until translucent.
- Add chicken broth and drained white beans. Bring to a boil then simmer for 5 minutes.
- Stir in heavy cream, spinach, ricotta, mozzarella, and Parmesan. Simmer for about 5 minutes.
- Mix in broken lasagna noodles and cook until tender, about 10 minutes.
- Return the sausage to the pot and simmer for another 5 minutes.
- Season with salt and pepper to taste, then serve hot.
