Cooking Steps
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- Mix dark brown sugar, smoked paprika, onion powder, kosher salt, and black pepper in a small bowl.
- Rub the spice mixture all over the chicken thighs.
- Heat olive oil in a large oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for 6-8 minutes.
- Gently flip the chicken skin-side up and add chicken broth and apple cider vinegar around the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes until cooked through and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes and spoon pan juices over before serving, garnished with parsley or chives if desired.
