  • 1 lb Ground Beef can substitute with shredded chicken or black beans
  • 1 medium Onion finely chopped
  • 2 cloves Garlic freshly minced
  • 1 tbsp Chili Powder adjust to taste
  • 1 tsp Cumin
  • 1 tsp Paprika smoked paprika for extra flavor
  • to taste Salt & Black Pepper adjust based on taste
  • 1 cup Tomato Sauce or diced tomatoes
For the Taquitos
  • 8 tortillas Tortillas warm them to prevent cracking
  • 2 cups Shredded Cheese blend of cheddar and Monterey jack
  • 2 tbsp Cooking Oil for brushing

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat over medium heat and add the ground beef along with the finely chopped onion. Cook for about 5-7 minutes until the beef is well-browned and the onion is softened.
  2. Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Allow the mixture to cook for another minute until fragrant. Then, add the tomato sauce and let everything simmer for 2 minutes.
  3. Warm the tortillas in a dry skillet for about 10 seconds on each side.
  4. Lay a warm tortilla flat and spoon about 2 tablespoons of the beef mixture and a generous sprinkle of shredded cheese onto the center. Roll tightly and place seam-side down on a parchment-lined baking sheet.
  5. Preheat your oven to 425°F (220°C). Brush the assembled taquitos lightly with cooking oil and bake for 15-18 minutes until golden brown.
  6. Remove from the oven and let them cool slightly before serving. Pair with dipping sauces like guacamole, salsa, or sour cream.
