Steps
- Bring a large pot of salted water to a rolling boil. Add gnocchi and cook for 2–3 minutes, until they float. Drain in a colander.
- In a frying pan, heat olive oil over medium-high heat. Add drained gnocchi in a single layer and cook for 2–3 minutes until golden brown.
- Stir the gnocchi with a spatula to brown all sides evenly. Cook for another 2–3 minutes.
- Lower heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add spinach and stir until wilted, about 2–3 minutes.
- Season with salt, black pepper, and red pepper flakes. Stir and remove from heat. Add crumbled feta and mix well.
