For the Gnocchi
  • 1 pound gnocchi store-bought or homemade
  • 2 tablespoons olive oil extra virgin recommended
For the Greens
  • 4 cups fresh spinach can substitute kale or Swiss chard
  • 2-3 cloves garlic minced
For Seasoning
  • to taste salt
  • to taste black pepper
  • 1 pinch red pepper flakes optional
For the Creaminess
  • 1 cup feta cheese crumbled

Method
 

Steps
  1. Bring a large pot of salted water to a rolling boil. Add gnocchi and cook for 2–3 minutes, until they float. Drain in a colander.
  2. In a frying pan, heat olive oil over medium-high heat. Add drained gnocchi in a single layer and cook for 2–3 minutes until golden brown.
  3. Stir the gnocchi with a spatula to brown all sides evenly. Cook for another 2–3 minutes.
  4. Lower heat and add minced garlic. Sauté for about 1 minute until fragrant.
  5. Add spinach and stir until wilted, about 2–3 minutes.
  6. Season with salt, black pepper, and red pepper flakes. Stir and remove from heat. Add crumbled feta and mix well.
