- Preheat the oven to 400°F (200°C).
- Wash, peel, and slice the sweet potatoes into thin rounds, about 1/8 inch thick.
- Toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.

- Flip the sweet potato slices and bake for another 15 minutes until crispy and golden brown.
- While baking, prepare toppings: drain and rinse black beans, chop bell peppers and onion, and grate cheddar cheese.
- Layer the baked sweet potatoes with black beans, chopped vegetables, and cheese.
- Return to the oven for an additional 5 minutes to melt the cheese.
- Garnish with green onions and avocado. Serve with salsa and Greek yogurt.
