For the Sweet Potatoes
  • 2 medium Sweet Potatoes Can substitute with butternut squash.
  • 2 tablespoons Olive Oil Avocado oil can be used if preferred.

For the Topping
  • 1 can Black Beans Drain and rinse before using.
  • 1 medium Red Bell Pepper Can substitute with green pepper.
  • 1 medium Yellow Bell Pepper Any bell pepper variety works.
  • 1 medium Red Onion Green onions can be used for a milder flavor.
  • 1 cup Cheddar Cheese Dairy-free cheese can be used.
For Serving & Garnish
  • 2 tablespoons Green Onion Omit if unavailable.
  • 2 medium Avocado
  • 1 cup Salsa Choose your favorite variety.
  • 1 cup Greek Yogurt Can be used as a substitute for sour cream.

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Wash, peel, and slice the sweet potatoes into thin rounds, about 1/8 inch thick.
  3. Toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange sweet potato slices on a baking sheet in a single layer and bake for 15 minutes.
  5. Flip the sweet potato slices and bake for another 15 minutes until crispy and golden brown.
  6. While baking, prepare toppings: drain and rinse black beans, chop bell peppers and onion, and grate cheddar cheese.
  7. Layer the baked sweet potatoes with black beans, chopped vegetables, and cheese.
  8. Return to the oven for an additional 5 minutes to melt the cheese.
  9. Garnish with green onions and avocado. Serve with salsa and Greek yogurt.
