Step-by-Step Instructions
  1. In a blender, combine 1 cup of diced mango, 1 cup of coconut milk, 2 tablespoons of lime juice, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Blend until smooth and creamy, about 30–45 seconds.
  2. In a medium-sized mixing bowl, stir together 1 cup of old-fashioned rolled oats and 2 tablespoons of chia seeds. Mix thoroughly to ensure the chia seeds are evenly dispersed.
  3. Pour the sweet mango-coconut blend over the oat and chia mixture. Use a spatula to gently mix until every oat is well-coated.
  4. Allow the mixture to sit at room temperature for 5 minutes to let the chia seeds absorb the liquid.
  5. Divide the mixture into individual jars or airtight containers, pressing down gently to eliminate air pockets.
  6. Cover each jar with a lid and place them in the refrigerator. Chill for at least 4 hours, ideally overnight.
  7. When ready to enjoy, stir the mixture, and adjust the consistency with coconut milk if needed. Top with extra mango chunks, coconut flakes, or your preferred toppings.
