- In a blender, combine 1 cup of diced mango, 1 cup of coconut milk, 2 tablespoons of lime juice, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Blend until smooth and creamy, about 30–45 seconds.
- In a medium-sized mixing bowl, stir together 1 cup of old-fashioned rolled oats and 2 tablespoons of chia seeds. Mix thoroughly to ensure the chia seeds are evenly dispersed.
- Pour the sweet mango-coconut blend over the oat and chia mixture. Use a spatula to gently mix until every oat is well-coated.
- Allow the mixture to sit at room temperature for 5 minutes to let the chia seeds absorb the liquid.
- Divide the mixture into individual jars or airtight containers, pressing down gently to eliminate air pockets.
- Cover each jar with a lid and place them in the refrigerator. Chill for at least 4 hours, ideally overnight.
- When ready to enjoy, stir the mixture, and adjust the consistency with coconut milk if needed. Top with extra mango chunks, coconut flakes, or your preferred toppings.
