  • 4 cups Beef Broth You can use chicken or vegetable broth for a lighter flavor.
  • 1 tsp Freshly Ground Black Pepper Adjust to taste.
For Garnish
  • ½ cup Fresh Parsley Substitute with green onions if unavailable.

Cooking Steps
  1. Cook the Bacon: Place thick bacon in a Dutch oven over medium heat for 5-7 minutes until crispy and golden. Transfer to paper towels, reserving grease.
  2. Brown the Sausages: In the same pot, cook pork sausages for 2-3 minutes per side until browned. Allow to cool slightly and cut into one-inch pieces.
  3. Deglaze the Pot: Pour ½ cup of beef broth into the pot, scraping up browned bits from the bottom. Let simmer for 1-2 minutes.
  4. Layer the Ingredients: Layer onions, bacon, half of the parsley, half of the potatoes, browned sausage pieces, and remaining potatoes and parsley in the pot. Sprinkle with black pepper.
  5. Add the Broth and Prepare to Bake: Pour remaining beef broth over the layered ingredients. Cover with a lid or foil.
  6. Bake to Perfection: Preheat the oven to 450°F (232°C) and bake for 40 minutes covered, then uncover and bake for an additional 25 minutes.
  7. Enhance with Butter (Optional): Add 2 tablespoons of butter in the last 25 minutes of baking for added richness.
  8. Garnish and Serve: Remove from oven, cool for a few minutes, and garnish with parsley before serving with traditional Irish bread.
