- In a medium mixing bowl, combine the maple syrup, buffalo sauce, rice vinegar, ground ginger, garlic powder, kosher salt, black pepper, and red pepper flakes. Whisk until well blended.
- Heat a large skillet over medium-high heat and add the olive oil or chili oil. Once shimmering, add the ground beef. Cook for 1-2 minutes on each side, breaking it up until fully browned.
- Pour the prepared firecracker sauce over the browned beef. Stir continuously for 60-90 seconds until the beef is evenly coated.
- Continue to stir the mixture over medium heat for another 1-2 minutes until the sauce thickens and the beef develops crispy bits.
- Remove from heat and serve over rice or noodles. Garnish with sliced scallions and toasted sesame seeds.
