Method
 

Pancake Instructions
  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
  2. In another bowl, combine the buttermilk, large egg, melted butter, and vanilla extract. Whisk these ingredients together until smooth and creamy.
  3. Gently pour the wet mixture into the bowl of dry ingredients. With a spatula, fold the two mixtures together until just combined; a few lumps are perfectly fine.
  4. Let the batter rest for about 5 minutes, allowing it to thicken slightly.
  5. Heat a nonstick skillet over medium heat and add a small pat of butter. Pour ΒΌ cup of pancake batter onto the skillet for each pancake. Cook for 2–3 minutes or until bubbles form on the surface.
  6. Flip and allow the pancake to cook for an additional 1–2 minutes, until golden brown.
