Pancake Instructions
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
- In another bowl, combine the buttermilk, large egg, melted butter, and vanilla extract. Whisk these ingredients together until smooth and creamy.
- Gently pour the wet mixture into the bowl of dry ingredients. With a spatula, fold the two mixtures together until just combined; a few lumps are perfectly fine.
- Let the batter rest for about 5 minutes, allowing it to thicken slightly.
- Heat a nonstick skillet over medium heat and add a small pat of butter. Pour ΒΌ cup of pancake batter onto the skillet for each pancake. Cook for 2β3 minutes or until bubbles form on the surface.
- Flip and allow the pancake to cook for an additional 1β2 minutes, until golden brown.
- Stack the pancakes on a warm plate, ready to enjoy, topped with a pat of butter and a drizzle of maple syrup.
