Step-by-Step Instructions
  1. Pat dry the chicken using paper towels. Drizzle olive oil over the chicken and season generously with salt, black pepper, and dried Italian seasoning. Set aside.
  2. Scrub the small potatoes under running water, pat dry and toss with olive oil, salt, and pepper.
  3. Melt unsalted butter, then whisk in chicken broth, garlic, onion powder, and Italian seasoning.
  4. Grease the slow cooker and layer seasoned potatoes at the bottom, then place chicken on top.
  5. Pour sauce over chicken and potatoes, and sprinkle with Parmesan cheese.
  6. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  7. Check for doneness with a meat thermometer; chicken should be at 165°F (74°C) and potatoes tender.
  8. Sprinkle with more Parmesan, cover for a few minutes, garnish with parsley, and serve warm.
