  • 1 medium Onion any variety, yellow preferred
  • 2 cloves Garlic freshly minced
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1 tsp Chili Powder optional
  • 1 tsp Salt
  • 1 tsp Pepper
For the Potatoes
  • 2 cups Potatoes Yukon Gold recommended
  • 1 medium Red Bell Pepper optional

Step-by-Step Instructions
  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add diced potatoes and sauté until golden brown and tender, about 10-12 minutes. Remove and set aside.
  2. In the same skillet, add another tablespoon of oil. Toss in chopped onion and optional red bell pepper, sautéing for 3-4 minutes until softened.
  3. Add minced garlic and cook for an additional minute, stirring constantly.
  4. Incorporate ground beef, breaking it apart as it cooks, about 7-8 minutes until fully cooked and browned.
  5. Sprinkle in smoked paprika, cumin, chili powder, salt, and pepper. Stir well and let cook for 1-2 minutes.
  6. Return cooked potatoes to the skillet, mixing everything together and cooking for an additional 3-4 minutes.
  7. Taste and adjust seasoning if necessary. Garnish with fresh herbs if desired and serve warm.
