Method

Step‑By‑Step Instructions
  1. Begin by peeling and dicing your sweet potatoes into 1/2-inch cubes for even cooking. If you prefer a softer texture, you can pre-cook them by boiling for 5-7 minutes or microwaving for about 5 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add diced onion and minced garlic, sautéing for about 5 minutes until the onions are translucent and fragrant.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for approximately 7-10 minutes, stirring occasionally, until the turkey is browned and fully cooked. Drain any excess grease.
  4. Stir in the diced red bell pepper, rinsed black beans, and corn, mixing well. Season with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for another 5-7 minutes.
  5. In a large mixing bowl, combine the turkey mixture with the prepared sweet potatoes, ensuring an even distribution of ingredients. Pour the combined mixture into a greased 9x13 inch baking dish.
  6. Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the foil, sprinkle shredded cheddar cheese on top, and return to the oven for an additional 5-10 minutes.
  7. Once cooked, let the Ground Turkey Sweet Potato Bake rest for a few minutes before serving.
