For the Filling
  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 Onion diced
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Italian Seasoning
  • 1 cup Frozen Mixed Vegetables or fresh vegetables for more crunch
  • 1 can Cream of Mushroom Soup or other canned soups
For the Mashed Potatoes
  • 3 cups Mashed Potatoes use fresh or leftovers
  • 1/4 cup Milk non-dairy milk can be used
  • 2 tbsp Butter
  • 1 cup Shredded Cheddar Cheese can use mozzarella or Monterey Jack

Method
 

Preparation Steps
  1. Begin by peeling and cubing about three cups of potatoes. Place them in a pot of salted water and bring to a rolling boil. Cook for 15-20 minutes until fork-tender. Drain and mash with milk, butter, salt, and pepper.
  2. In a skillet, heat olive oil and sauté onion and garlic for 3-4 minutes. Add ground beef and cook until browned, about 5-7 minutes.
  3. Stir in mixed vegetables, cream of mushroom soup, and Italian seasoning. Simmer for 5-7 minutes until thickened.
  4. In a baking dish, spread half of the mashed potatoes, layer the meat mixture, sprinkle with cheese, and dollop remaining potatoes on top.
  5. Bake at 375°F (190°C) for 25-30 minutes until golden and bubbly. Let rest for 5-10 minutes before serving.
