Step-by-Step Instructions for Slow Cooker Beef Ramen Noodles
  1. In a large skillet, heat over medium heat. Add the ground beef and cook until it’s no longer pink, approximately 5-7 minutes.
  2. Carefully transfer the cooked beef into a 6-quart slow cooker, scraping up any browned bits from the skillet.
  3. Add the matchstick carrots, sliced red bell pepper, and chopped scallions to the slow cooker.
  4. In a separate bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and chicken or beef stock until smooth. Pour this blend into the slow cooker.
  5. Cover the slow cooker and set it to LOW for 4-6 hours.
  6. About 30 minutes before serving, add the dry ramen noodles directly into the slow cooker.
  7. Once the noodles are cooked and tender, serve hot in bowls. Garnish with extra scallions and sesame seeds.
