  • 2 tablespoons Avocado oil Can substitute with olive oil or coconut oil.
  • 1 medium Yellow onion Can replace with shallots or leeks.
  • 1 cup Green bell peppers Other bell pepper colors can be used.
  • 2 cups Sweet potatoes Regular potatoes can substitute but will change flavor.
  • 2 cloves Garlic Garlic powder can be used if fresh isn’t available.
  • 1 pound Turkey sausage Can use pork sausage or any preferred sausage.
  • 6 large Eggs Can use egg substitutes for a vegan option.
  • 1/2 cup Milk Any non-dairy milk works deliciously.
  • 1 teaspoon Dried thyme Oregano or Italian seasoning can substitute.
  • 1 teaspoon Smoked paprika Regular paprika is a nice substitute.
  • 1 teaspoon Salt Adjust according to your taste.
  • 1/2 teaspoon Black pepper White pepper can be used as an alternative.
For the Toppings
  • 1 cup Shredded mozzarella cheese Any melting cheese like cheddar can be used.
  • 1/2 cup Crumbled feta or goat cheese Any soft cheese can be swapped.
  • 1/4 cup Fresh parsley Chives or green onions are great alternatives.
  • 1/4 teaspoon Red pepper flakes For added heat; optional.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with avocado oil.
  2. Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Add diced yellow onions and chopped green bell peppers; sauté for 3-4 minutes until softened. Stir in minced garlic and diced sweet potatoes, cooking for additional 7-10 minutes until the sweet potatoes are tender. Transfer to the baking dish.
  3. In the same skillet, add turkey sausage and cook, breaking it up, for 5-7 minutes until browned. Drain excess fat and mix with the sautéed veggies in the baking dish.
  4. In a mixing bowl, whisk together 6 eggs, 1/2 cup milk, 1 teaspoon dried thyme, and 1 teaspoon smoked paprika. Pour this egg mixture evenly over the veggie and sausage mixture in the baking dish.
  5. Sprinkle 1 cup shredded mozzarella cheese and 1/2 cup crumbled feta cheese over the top. Bake uncovered in the oven for 35-40 minutes until eggs are set and top is golden brown.
  6. Remove from the oven and let cool for 5-10 minutes. Garnish with freshly chopped parsley and optional red pepper flakes before slicing and serving warm.
