Step-by-Step Instructions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with avocado oil.
- Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Add diced yellow onions and chopped green bell peppers; sauté for 3-4 minutes until softened. Stir in minced garlic and diced sweet potatoes, cooking for additional 7-10 minutes until the sweet potatoes are tender. Transfer to the baking dish.
- In the same skillet, add turkey sausage and cook, breaking it up, for 5-7 minutes until browned. Drain excess fat and mix with the sautéed veggies in the baking dish.
- In a mixing bowl, whisk together 6 eggs, 1/2 cup milk, 1 teaspoon dried thyme, and 1 teaspoon smoked paprika. Pour this egg mixture evenly over the veggie and sausage mixture in the baking dish.
- Sprinkle 1 cup shredded mozzarella cheese and 1/2 cup crumbled feta cheese over the top. Bake uncovered in the oven for 35-40 minutes until eggs are set and top is golden brown.
- Remove from the oven and let cool for 5-10 minutes. Garnish with freshly chopped parsley and optional red pepper flakes before slicing and serving warm.
