  • 2 tablespoons Fresh Dill Chopped, to be added last
For the Dressing
  • 1 tablespoon White Vinegar Adjust to taste
  • 3 tablespoons Olive Oil For smooth dressing
  • 1 teaspoon Sugar Balances acidity
  • 1/2 teaspoon Salt Coarse kosher salt recommended
  • 1/4 teaspoon Black Pepper For subtle heat

Method
 

Preparation Steps
  1. Slice cucumbers into thin rounds and place in a large mixing bowl.
  2. Peel and slice red onion thinly, soak in cold water if desired, then add to the cucumbers.
  3. In a small bowl, whisk together white vinegar, olive oil, sugar, salt, and black pepper until dissolved.
  4. Pour dressing over cucumber and onion mixture and gently toss to coat.
  5. Add freshly chopped dill and fold into the salad just before serving.
  6. Cover and chill in the refrigerator for at least 20 minutes to let flavors meld.
  7. Stir gently before serving and enjoy chilled.
