Making the Sauce
- In a medium bowl, whisk together Greek yogurt, fresh lime juice, sriracha, garlic powder, smoked paprika, and salt. Refrigerate.
Preparing the Shrimp
- Pat shrimp dry with paper towels. Combine smoked paprika, garlic powder, oregano, onion powder, salt, and pepper in a small bowl, then toss evenly over the shrimp.
Cooking the Shrimp
- Heat olive oil in a skillet over medium heat. Cook the seasoned shrimp for 2 minutes on each side until pink and opaque.
Warming the Tortillas
- In a separate skillet, toast the tortillas for 30 seconds on each side until warm.
