Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish with nonstick cooking spray.
  2. Cream together granulated sugar, brown sugar, and softened butter until light and fluffy. Add eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas, and mix until smooth.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet mixture and fold until just combined.
  5. Pour the batter into the baking dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. To make the toffee sauce, melt butter and brown sugar in a pot, then stir in heavy cream and vanilla extract until smooth.
  7. Once the cake cools for 10 minutes, poke holes into the surface and pour the toffee sauce over it. Allow to soak for at least 1 hour.
  8. Serve warm, slicing into squares and drizzling more toffee sauce over if desired.
