- Preheat your oven to 325°F (163°C) and grease your loaf pan.
- In a small bowl, whisk together 1 ½ cups of flour, 1 teaspoon of baking soda, and a pinch of salt.
- In another bowl, mix 1 egg, 1 cup of sugar, ⅓ cup of oil, ¼ cup of milk, and 1 teaspoon of vanilla.
- Combine the dry mixture into the wet mixture and stir until just combined.
- Mash 3 ripe bananas and fold into the batter along with ½ cup of nuts if using.
- Pour the batter into the greased loaf pan.
- Bake for 55-65 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10-15 minutes before slicing.
