Ingredients
  

For the Salad
  • 8 oz Rotini Pasta Use gluten-free pasta for a gluten-free option.
  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Cucumber Diced.
  • 1/4 cup Red Onion Thinly sliced.
  • 1/2 cup Black Olives
  • 8 oz Mozzarella Balls You can use feta for a tangy twist.
For the Dressing
  • 1/4 cup Olive Oil Extra virgin is preferred.
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Italian Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Method
 

Cooking and Preparation
  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8–10 minutes. Once cooked, drain the pasta in a colander, and rinse under cold water to stop the cooking process.
  2. While the pasta is cooling, prepare your fresh ingredients. Halve the cherry tomatoes and dice the cucumber into bite-sized pieces. Thinly slice the red onion and add in the black olives, along with mozzarella balls.
  3. Once the rotini has cooled, fold it into the bowl of prepared vegetables. Gently mix everything together.
  4. In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until combined.
  5. Pour the dressing over the pasta mixture and carefully toss the salad until all ingredients are well-coated.
  6. Cover the bowl with plastic wrap or a lid and place the salad in the refrigerator. Let it chill for at least 30 minutes.
