Method
 

Cooking Instructions
  1. Step 1: Caramelize the Onions. Slice the onions thinly. In a skillet, heat olive oil and butter over medium-low heat. Add sliced onions and cook for 25-30 minutes until golden and caramelized.
  2. Step 2: Prepare Meatloaf Mixture. In a mixing bowl, combine ground beef, eggs, almond flour, and coconut aminos. Season with salt and black pepper. Mix in half of the caramelized onions.
  3. Step 3: Shape & Bake. Preheat oven to 375°F (190°C). Shape meat mixture into a loaf on a baking sheet. Bake for 35-40 minutes or until internal temperature reaches 160°F (71°C).
  4. Step 4: Add Toppings & Finish Baking. Top the meatloaf with remaining caramelized onions and Gruyère cheese. Bake for another 10-15 minutes until cheese is melted and bubbly.
  5. Step 5: Rest & Serve. Let the meatloaf rest for about 10 minutes before slicing. Optionally garnish with sprigs of fresh thyme.
