Step-by-Step Instructions
  1. In a large mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a tiny pinch of salt. Use a spatula to fold the ingredients together carefully.
  2. Once well-combined, use a tablespoon to scoop portions of the mixture and roll them into small balls, about the size of a golf ball, and place them on a parchment-lined baking sheet.
  3. If you prefer a baked version, preheat your oven to 350°F (175°C) and bake the bites for 10-12 minutes until light golden brown.
  4. Allow the bites to cool on the baking sheet for at least 5 minutes, or refrigerate for 20-30 minutes for the no-bake option.
  5. Once cooled, drizzle a little honey over each bite and garnish with extra blueberries.
  6. Transfer the bites to an airtight container. They can be stored in the fridge for up to a week or frozen for longer.
