- In a large mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a tiny pinch of salt. Use a spatula to fold the ingredients together carefully.
- Once well-combined, use a tablespoon to scoop portions of the mixture and roll them into small balls, about the size of a golf ball, and place them on a parchment-lined baking sheet.
- If you prefer a baked version, preheat your oven to 350°F (175°C) and bake the bites for 10-12 minutes until light golden brown.
- Allow the bites to cool on the baking sheet for at least 5 minutes, or refrigerate for 20-30 minutes for the no-bake option.
