  • 1 teaspoon Salt consider sea salt
For the Chickpeas
  • 1 can Chickpeas or cooked lentils
  • 1 teaspoon Paprika can use smoked paprika
For the Assembly
  • 1 cup Hummus store-bought or homemade
  • 1/2 cup Red Onion sliced, or use green onions
  • 1/4 cup Parsley can substitute with cilantro or chives
  • 1/2 cup Vegan Feta Cheese optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the sweet potatoes in half lengthwise, scoring each half.
  3. Drizzle sweet potatoes with olive oil and sprinkle with salt, then place skin-side up on a baking sheet.
  4. Roast sweet potatoes for 25-30 minutes, until caramelized and fork-tender.
  5. Rinse and dry the chickpeas, then toss with olive oil, paprika, and salt.
  6. Spread chickpeas on another baking sheet and roast for about 20-25 minutes.
  7. Assemble by topping roasted sweet potatoes with hummus, chickpeas, red onion, parsley, and feta.
  8. Serve warm, optionally with greens.
