- Preheat your oven to 350°F (175°C).
- In a medium skillet, brown 1 pound of lean ground beef over medium heat for 6-8 minutes.
- In a large bowl, combine browned beef, frozen cubed potatoes, cream of celery soup, cream of cheddar soup, and 1 cup of shredded cheddar cheese. Stir in salt and pepper.
- Transfer the mixture into a greased 9 x 13-inch casserole dish and spread evenly.
- Top with 1 cup of shredded cheddar cheese.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is melted and bubbly.
- Let the casserole cool for 5-10 minutes before serving.
