  • 1 small bunch Fresh thyme Earthy flavor; dried thyme can be used if fresh is unavailable.
  • 3-4 sprigs Fresh rosemary Adds fragrant note; dry rosemary can substitute.
For the Cooking Liquid
  • 0.5 cup Chicken broth Provides moisture during cooking.
  • 0.5 cup White wine Adds acidity and depth; swap with lemon juice for a non-alcoholic version.

Method
 

Steps
  1. Preheat your oven to 400°F (204°C).
  2. Line the casserole dish with foil and spread sliced shallots and half of the garlic cloves on the bottom.
  3. Pat the chicken dry and season it, placing it skin side up over the shallots and garlic. Drizzle with oil and season with salt and pepper.
  4. Nestle thyme sprigs and remaining garlic cloves around the chicken, then pour chicken broth and white wine around it.
  5. Roast in the oven for about 1 hour until the skin is golden brown and internal temperature reaches 165°F (74°C).
  6. Optionally, turn on the broiler for 5-7 minutes to enhance crispiness.
  7. Remove from the oven and let the chicken rest for a few minutes before serving. Baste with pan sauce for extra flavor.
