  • 8 ounces Spaghetti or linguine or fettuccine
  • 1 tablespoon Salt for seasoning pasta water
For the Sauce
  • 1/4 cup Olive Oil high-quality extra-virgin
  • 4 cloves Garlic thinly sliced
  • 1/4 teaspoon Red Pepper Flakes adjust to spice tolerance
For the Fresh Finish
  • 1 cup Fresh Parsley chopped
  • 1/2 cup Parmesan Cheese optional, or use nutritional yeast for vegan

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add spaghetti and cook until al dente, about 2-3 minutes shy of package instructions.
  2. While the spaghetti is cooking, heat 1/4 cup of olive oil in a large skillet over medium heat. Add sliced garlic and sauté for 2-3 minutes until translucent.
  3. Once garlic is softened, season with salt and red pepper flakes. Cook for 3-4 more minutes until golden brown.
  4. Before draining spaghetti, scoop out 1 cup of pasta water. Drain spaghetti and add it to garlic mixture in the skillet. Pour in 1/2 cup of reserved pasta water.
  5. Let spaghetti simmer in the garlic oil for 2-3 minutes, tossing with chopped parsley.
  6. Serve immediately, topped with crushed red pepper and freshly grated Parmesan cheese.
