  • 1 cup half and half or heavy cream, or milk
  • 1 cup freshly grated Parmesan avoid pre-grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
For the Vegetables
  • 2 cups baby spinach or kale, or Swiss chard
  • 1/4 cup chopped fresh parsley for garnish

Step-by-Step Instructions
  1. Preheat your oven to 400°F. Lightly oil a 9x13-inch baking dish.
  2. Season the chicken thighs with Italian seasoning, kosher salt, and black pepper. Sear in a hot skillet for 2-3 minutes on each side until golden brown. Let rest.
  3. Sauté baby spinach in the same skillet until wilted, then remove from the skillet.
  4. Melt butter in the skillet, add garlic and sauté until fragrant. Whisk in flour, then add chicken broth and half and half, stirring until thickened. Stir in Parmesan and let it melt.
  5. In the baking dish, arrange chicken, halved potatoes, and spinach. Pour the cream sauce over everything.
  6. Bake for 25-30 minutes until chicken reaches 165°F and potatoes are tender.
  7. Garnish with parsley before serving warm.
