For the Gravy
  • 0.5 cup all-purpose flour gluten-free flour can be substituted
  • 4 tablespoons unsalted butter
  • 1 medium white onion diced
  • 2 cloves garlic minced
  • 2 cups chicken stock
  • 1 cup heavy cream or half and half
  • 1 tablespoon dried parsley for garnish

Step-by-Step Instructions
  1. Pat the chicken thighs dry, then season both sides with seasoning salt, garlic powder, paprika, and Sazon seasoning.
  2. Dredge the seasoned chicken thighs in flour, shaking off excess flour.
  3. In an oven-safe skillet, heat oil and brown the chicken thighs on both sides for about 10 minutes.
  4. Remove excess oil, add butter, and sauté onion and garlic for 3-5 minutes until translucent.
  5. Stir in a bit of reserved flour, then whisk in chicken stock and simmer for 5 minutes. Add heavy cream.
  6. Combine the chicken thighs with the gravy and bring to a gentle boil.
  7. Preheat oven to 400°F, cover, and bake for about 45 minutes until chicken is fork-tender.
  8. Remove from oven, uncover, and serve hot, garnished with parsley.
