Ingredients
  

For the Chicken Tinga Sauce
  • 2 tablespoons Avocado Oil substitute with olive oil if preferred
  • 1 Sweet Onion diced
  • 3 Garlic Cloves minced
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika or chili powder
  • ½ teaspoon Cayenne Pepper adjust to taste
  • to taste Black Pepper fresh cracked
  • ½ cup Bone Broth (Chicken Broth) or vegetable broth
  • 1 can Fire Roasted Tomatoes or regular diced tomatoes
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Apple Cider Vinegar or lemon juice
  • 1 teaspoon Kosher Salt or sea salt
  • 2 cups Shredded Chicken such as rotisserie chicken
For the Guacamole
  • 2 Avocados ripe
  • 1 tablespoon Lime Juice or lemon juice
  • to taste Garlic Powder optional
For Assembly
  • 4 Gluten-Free Tortillas or corn tortillas
  • ½ cup Cotija Cheese or omit for dairy-free
  • ½ cup Fresh Cilantro for garnish
  • ½ cup Red Onion chopped

Method
 

Cooking Directions
  1. Warm a large saucepan over medium heat. Add avocado oil and let it heat until shimmering.
  2. Sauté the diced sweet onion for 4-5 minutes until tender and translucent. Add minced garlic and sauté for an additional 30 seconds.
  3. Stir in dried oregano, cumin, paprika, cayenne pepper, and black pepper. Cook for 1 minute, then add bone broth, tomatoes, tomato paste, apple cider vinegar, and kosher salt. Simmer for 7-10 minutes.
  4. Blend half of the sauce until smooth and return it to the saucepan.
  5. Add shredded chicken to the blended sauce and cook on low for 5 minutes.
  6. In a medium bowl, mash avocados with lime juice and optional garlic powder. Season with salt and pepper.
  7. Assemble tacos with the chicken mixture, guacamole, red onion, cheese, and cilantro.
