  • 8 slices Sourdough Bread or your favorite bread
  • 2-3 tablespoons Mayonnaise or Plain Greek Yogurt customize to taste
  • ¼ cup Buttery Spread or Softened Butter for grilling
  • 4 slices Provolone Cheese can substitute cheddar
For the Toppings
  • 1 cup Sliced Tomatoes choose ripe ones
  • ½ cup Pickled Onions for tang
  • ½ cup Roasted Red Peppers for sweetness
  • 1 cup Fresh Greens like arugula

Step-by-Step Instructions
  1. Prepare the skillet by coating it with nonstick spray or oil and heating over medium-low for about 2 minutes.
  2. Heat two slices of meatloaf in the skillet for around 3 minutes on each side until browned and warmed through.
  3. Spread mayonnaise or yogurt on one side of each bread slice and butter on the other side.
  4. Grill the bread in the skillet, buttered-side down, for about 2 minutes until golden brown.
  5. Assemble the sandwich with melted cheese, warmed meatloaf, and toppings on one slice of bread.
  6. Grill the assembled sandwich for 2 to 4 minutes on each side until the bread is toasted and cheese is melted.
  7. Let the sandwich cool for a couple of minutes, slice in half, and serve warm.
