- Preheat your oven to 375°F (190°C) and grease a standard loaf pan with a little oil.
- Finely dice the medium carrot and onion, then mince the garlic cloves and chop the fresh parsley.
- Pulse the saltine crackers in a food processor until they turn into fine crumbs, about 1 cup.
- In a large mixing bowl, combine the ground beef with the crushed saltine crackers, diced vegetables, parsley, and seasonings.
- Incorporate wet ingredients: egg, ¼ cup of ketchup, Worcestershire sauce, Dijon mustard, and a teaspoon of salt.
- Transfer the meat mixture into your prepared loaf pan and shape into a smooth loaf.
- For the glaze, mix ¼ cup of ketchup with 1 tablespoon of brown sugar in a small bowl and spread most over the meatloaf.
- Bake in the preheated oven for about 55-60 minutes, or until the internal temperature reaches 160°F (70°C).
