Step-by-Step Instructions for Mushroom Swiss Cheese Meatloaf
  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet, cook bacon until crispy, about 5-7 minutes. Remove and crumble it, reserving drippings.
  3. In the skillet, sauté onions and mushrooms in bacon fat for about 4-5 minutes.
  4. In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, sautéed onion and mushrooms, crumbled bacon, Swiss cheese, eggs, and Worcestershire sauce. Season with garlic powder, thyme, salt, and pepper. Mix gently.
  5. Layer half of the meat mixture in the loaf pan, create a trench, fill with Swiss cheese, then top with remaining meat mixture.
  6. Spread ketchup over the meatloaf and bake for 60-70 minutes until internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing. Serve warm.
