Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. Sauté onions and garlic in olive oil until soft, about 5-7 minutes. Let cool.
  3. In a mixing bowl, combine ground chicken, sautéed onion and garlic, Parmesan cheese, eggs, breadcrumbs, and vegetables. Mix until just combined.
  4. Transfer the mixture into the prepared loaf pan and shape the top slightly.
  5. Bake for approximately 45-55 minutes until a meat thermometer reads 165°F (74°C).
  6. Let the meatloaf rest in the pan for 10 minutes before slicing.
  7. Garnish with chopped parsley and serve.
