- Peel the sweet potatoes and cut them in half lengthwise. Spiralize them into noodles and set aside.
- Heat 1-2 tablespoons of olive oil in a large skillet over medium heat.
- Add thinly sliced garlic and sauté for about 4-5 minutes until golden brown.
- Sprinkle in sea salt, red pepper flakes, and black pepper to the garlic oil, stirring for 30 seconds.
- Add the spiralized sweet potato noodles to the skillet and cook for 2 minutes, stirring occasionally.
- Pour in 2-3 tablespoons of water and cover the skillet. Steam for about 5 minutes.
- In the last minute, fold in the baby kale until it wilts.
- Serve hot, garnished with extra red pepper flakes or herbs if desired.
