  • 1 cup Baby Kale Spinach can be an alternative.

Method
 

Step-by-Step Instructions
  1. Peel the sweet potatoes and cut them in half lengthwise. Spiralize them into noodles and set aside.
  2. Heat 1-2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add thinly sliced garlic and sauté for about 4-5 minutes until golden brown.
  4. Sprinkle in sea salt, red pepper flakes, and black pepper to the garlic oil, stirring for 30 seconds.
  5. Add the spiralized sweet potato noodles to the skillet and cook for 2 minutes, stirring occasionally.
  6. Pour in 2-3 tablespoons of water and cover the skillet. Steam for about 5 minutes.
  7. In the last minute, fold in the baby kale until it wilts.
  8. Serve hot, garnished with extra red pepper flakes or herbs if desired.
