  • 1 package Gimme Lean Ground Beef or swap with Impossible or Beyond
  • 1 cup Oatmeal alternatively breadcrumbs
  • 2 slices Whole Grain Bread or gluten-free bread
  • 1/2 cup Ketchup BBQ sauce can be used instead
  • 1 medium Onion (sautéed) or shallots/leeks
  • 1 medium Green Pepper (sautéed) or zucchini alternative
  • 1 teaspoon Garlic Salt or adjust with fresh garlic
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your loaf pan by greasing it.
  2. In a skillet, sauté diced onion and green pepper in oil for 5-7 minutes until softened.
  3. Mix sautéed vegetables with Gimme Lean, oatmeal, bread, ketchup, garlic salt, and black pepper in a mixing bowl.
  4. Transfer the mixture to the loaf pan, press it down, and cover with aluminum foil.
  5. Bake covered in the oven for 30 minutes.
  6. Prepare a coating by mixing additional ketchup or sauce.
  7. Remove the pan, apply the coating, and bake uncovered for another 15 minutes.
  8. Let the meatloaf cool for 10 minutes, slice, and serve.
