- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the cubed sweet potatoes and broccoli with olive oil, salt, and pepper. Spread them in a single layer on the prepared baking sheet.
- Roast the vegetables for 20–25 minutes until tender and slightly golden, stirring halfway through.
- Slice the sausage into bite-sized pieces and cook in a skillet over medium heat for 5–7 minutes until browned.
