Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes and broccoli with olive oil, salt, and pepper. Spread them in a single layer on the prepared baking sheet.
  3. Roast the vegetables for 20–25 minutes until tender and slightly golden, stirring halfway through.
  4. Slice the sausage into bite-sized pieces and cook in a skillet over medium heat for 5–7 minutes until browned.
  5. In a small saucepan, melt the butter over low heat. Add garlic and sauté for 1 minute, then stir in honey, soy sauce, and vinegar, simmering for 2–3 minutes until slightly thickened.
  6. Combine the roasted vegetables and cooked sausage on the baking sheet. Drizzle the honey garlic sauce over them and toss to combine.
  7. Return the baking sheet to the oven for an additional 5–7 minutes to meld flavors.
  8. Sprinkle with freshly chopped parsley before serving.
