Chickpea Mixture
  • 1 can chickpeas drained and rinsed
  • 1 medium avocado ripe, diced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced
  • 2 tablespoons green onion chopped
  • 1 stalk celery diced, optional
  • 1 tablespoon dill fresh, chopped
  • 3 slices pickles diced, dill pickles preferred
  • salt to taste
  • pepper to taste
For Assembly
  • 2 slices bread whole grain or pita recommended
  • 2 leaves lettuce optional

Method
 

Preparation Steps
  1. Mash the chickpeas in a large bowl with a potato masher or fork until slightly chunky.
  2. Mix in diced avocado, lemon juice, garlic, green onion, celery, dill, pickles, salt, and pepper until well combined.
  3. Taste and adjust seasoning with additional lemon juice, salt, or pepper as needed.
  4. Spread the chickpea mixture on one slice of bread and top with lettuce leaves if desired. Place another slice of bread on top.
  5. Slice sandwiches in half and serve immediately for best taste.
