  • 1 lb Ground Chicken Use ground chicken thighs for moisture.
  • 2 tbsp Harissa Paste Choose based on your heat preference.
  • 2 cloves Garlic Minced, can use garlic powder if needed.
  • 1 medium Yellow Onion Finely chopped; shallots can be a substitute.
  • 1/4 cup Parsley Chopped, fresh adds color.
  • 1 tbsp Fresh Dill Chopped, can use tarragon as alternative.
  • 1 tbsp Fresh Mint Chopped, omit if not using.

  • 1 tbsp Olive Oil For frying, can use neutral oil.
For the Cucumber Herb Salad
  • 1 medium Seedless Cucumber Diced; zucchini can be an alternative.
  • 2 tbsp Lemon Juice Fresh preferred but bottled works.
  • 1/4 small Red Onion Diced; green onions can be used.
For Assembly
  • 1 cup Couscous Or your choice of base like quinoa or cauliflower rice.
  • 1/2 cup Hummus Store-bought for convenience.
  • 1/4 cup Feta Cheese Optional for dairy-free version.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together ground chicken, harissa paste, minced garlic, chopped onion, parsley, dill, and mint. Season with salt and pepper.
  3. Form the mixture into 12-14 meatballs, about 1.5 inches in diameter.
  4. Heat olive oil in a skillet over medium-high heat and brown the meatballs for 3-4 minutes on each side.
  5. Transfer browned meatballs to the baking sheet and bake for 12-15 minutes or until cooked through.
  6. Prepare the cucumber herb salad by combining diced cucumber, red onion, dill, mint, and lemon juice in a small bowl. Season to taste.
  7. Assemble the bowl by placing hummus, couscous, cucumber salad, and meatballs, finishing with feta and olive oil.
